We’ve explored the world’s highlands, breaking bread with coffee farmers. We’ve roasted and blended. Experimented and invented. Honed our craft, and made countless coffees and friends. At La Colombe Coffee Workshop, everyone is welcome—and we’re only just getting started.

In 1994, our founders set up shop with a single roasting machine and a dream. Inspired by ancient and modern coffee traditions from their travels, they set out to introduce café culture to America. La Colombe—‘the Dove’ in French—honors that spirit of warmth, hospitality, and exploration
Our culinary-grade coffee was a hit at some of America’s finest restaurants. We kept moving: opening coffeehouses across the country and tinkering in our workshop. One of our proudest inventions? Our frothy, creamy, impeccably textured Draft Latte®. We’ll never stop bringing bold, better-made coffee to everyone.
1994
Opened the first La Colombe café in Philadelphia, with a micro roaster in the back.
1995
Opened a full-scale roastery in Philadelphia, and started supplying coffee to some of America’s finest restaurants and hotels.
2007
Opened our first café in New York City, America’s culinary capital.
2009
Perfected the recipe for Pure Black Cold Brew.
2011-2015
Opened new cafés in New York, Philly, Chicago, and DC.
2015
Invented and introduced our iconic Draft Latte® on tap at our cafés.
2016-2017
Built a canning plant in Michigan and launched canned Draft Latte® at retailers nationwide.
2023
Joined forces with Chobani, combining our coffee expertise with their dairy and oat magic.
2025
We never settle. We’ve got 29 cafés and counting, and we’re still working hard to bring coffeehouse-quality coffee to everyone, everywhere.

At La Colombe Coffee Workshop, we sweat every detail. Since 1994, we’ve spared no expense when it comes to sourcing, roasting, and brewing exceptional coffee.
We’ve traveled the world’s coffee highlands, cultivating long-term relationships with farmers and producers. For us, roasting and brewing is about expressing the terroir, elevation, and effort behind each bean.
We work to honor every hand that’s touched our coffee. Every batch roasted, every experiment conducted, every espresso made. Coffee is a collaboration, and we’re excited to share it with you.
