Corsica checks numerous boxes for us: 1) dark roast absent bitterness, 2) low acidity, 3) priced competitively compared to other dark roasts of comparable quality. We do pour over---16:1, 200 degrees etc etc. and use a very fine grind---seems to extract the best flavor. A little disappointing that the coffee only comes with a "best used by date" and not an actual roast date. Assuming most roasters place a 6 month "expiry" on their products, the coffee we order generally has been roasted about a month prior. It's not a problem for us as we generally like beans that are at least 10-14 days removed from their roast date, but it does mean you won't see the usual "bloom" immediately after initially adding water on a pour over. Overall, good value for an everyday brew if you like beans ranging from full city to dark roast
